Organic Granola Delight | グラノーラ デライト

The cravings for the crunchiness and the flavor of the mixed spices of Granolas are one of my addictive foods. I often wonder why? but they say food traces the memory in your childhood days so I guess it is from my Irish days when I was an adolescent…way back when?

On top of my remaining brain memory chips, the reassurance of  ‘’branded healthy food’’ during my Californian days definitely doubles the addiction level – no gluten, no sugar equals good food.

Here is recipe which is not so dry and crumbly amongst my numerous granola recipes which I encountered at ‘food 52’ site. It is like a thin cake like texture but be assure – NO flour and sugar added but composed with all natural ingredients.

A long holiday period called Golden Week is coming up in Japan. April 29th, May 3-6th is a national holiday. This Granola may just be a good snack for munchies for a long car travel or outdoor activity.

Organic Granola Delight Recipe –

The Wet Ingredients

  • 75g coconut oil
  • 75g honey
  • 175g unsweetened almond milk
  • 1 teaspoons vanilla extract
  • 1 chia egg (1 egg + 1 tbsp ground chia + 4 tbsp water)
  • 2 ripe banana, broken into 1.5 cm chunks
  • Zest of 1 lemon

The Dry Ingredients

  • 200g almond flour
  • 120g quinoa flakes (or oats)
  • 30g sesame seeds
  • 30g quinoa seeds
  • 70 chopped raw almonds / walnuts
  • 70g dried cranberries
  • 20g chocolate chips (if preferred sweeter)
  • 50g unsweetened coconut flakes
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  1. Preheat the oven to 180C/350 F.
  2. Mix all the dry ingredients.
  3. Blend all the wet ingredients.
  4. Mix dry and wet ingredients and spread on a well lined 11″ x 7″ pan
  5. Place pan in preheated oven and bake until golden (about 55-60 minutes) Reduce the heat if the top becomes too over burned.

The Wet Ingredients

  • ココナツオイル・・・・・・75g
  • はちみつ・・・・・・・・・75g
  • アーモンドミルク・・・・・533g
  • バニラエッセンス・・・・小匙1
  • チャイ卵・・・・・・・・全卵1個+チャイブレンド大匙1+水大匙4
  • バナナ・・・・・・・・・2本
  • レモン・・・・・・・・・1個 外側の皮

The Dry Ingredients

  • アーモンドプードル・・・・200g
  • ミューズリー・・・・・・・120g
  • 胡麻・・・・・・・・・・・30g
  • アーモンドか胡桃・・・・・70g
  • クランベリーかレーズン・・・・70g
  • ココナッツフレーク・・・・・・50g
  • ベーキングソーダ・・・・・・・小匙1
  • シナモンパウダー・・・・・・・小匙1
  • 塩・・・・・・・小匙1/2

①オーブンを180℃/350Fに予熱しておく。
②ドライ系、液体系の材料をそれぞれのボウルに混ぜておく。
③二つの材料を一緒に混ぜ合わせる。
④ベーキング皿にオーブンペーパを敷いて、約2cm程度の厚みに伸ばしていく。50分〜60分、焼く。焦げない様に注意。
