Wafer Thin Sesame Cookie | 薄焼き胡麻クッキー

This is one of my favorite cookies which is ‘light’, ‘thin’, ‘organic’, ‘easy’ and (seems) ‘healthy’.

It’s basically a cookie with lots of sesame combined with egg whites; thin and crispy. It stays crispy so it is a nice nibble to have in your cookie jar.

  • 80g ~ 90g White & Black Sesame Combined
  • 1 Egg White
  • 30g Flour
  • 30g Granulated Sugar
  • 20g Melted Butter


  1. In a clean bowl, whisk the egg white and sugar until you have a hard meringue mixture.
  2. Melt the butter and add to the mix, slowly.
  3. Add the flour and next the sesame seeds, blend with a wooden spoon or spatula.
  4. Use a tablespoon to drop about half a tablespoon of mixture onto a baking tin (with a greasing paper/parchment paper).
  5. Use a fork to thinly spread the mixture (without any holes).
  6. Bake at 180C for about 5-7minutes until the rims starts to brown a little.
  7. This recipe makes about 10-12 thin sesame cookies.

  • 白胡麻/黒胡麻‥‥‥‥‥80~90g
  • 卵白‥‥‥‥‥‥‥‥‥1個分
  • 小麦粉‥‥‥‥‥‥‥‥30g
  • グラーニュ糖‥‥‥‥‥30g
  • 溶かしバター‥‥‥‥‥20g


  1. ボウルに卵白を入れ、泡立て器で混ぜグラニュー糖をいれ、さらに泡立てます。
  2. もったりと白くなってきたら、溶かしバターを加え、さらに混ぜます。
  3. 小麦粉を加え、次に胡麻を加えゴムベラ混ぜる。
  4. オーブンの天板にクッキングシートを敷き、大匙1くらいの生地をのせ、フォークの背などで丸く広げていく。このとき、フォークの背に水をつけながら広げていくこと。
  5. 180℃のオーブンで、5~7分焼く。
  6. このレシピは10〜12個のクッキーが出来上がります。
