hot summer night…Gazpacho Pasta | ガスパチョ・パスタ

At a record breaking temperature of 37C (99F) today in Tokyo, menu for dinner may sometimes become nerve racking affected by the heat wave = loss of appetite.

A cold soup came into my mind but twisted the idea when noodles added to covert this into an original ‘Gazpacho Pasta’.  ‘Gazpacho’ is a soothing cold Spanish vegetable soup, simple to make, healthy and well received during the summer hot days.















Gazpacho Pasta Recipe –


  • Tomato (400g) 2~3 midsize tomatoe
  • 1 Cucumber
  • 1/2 Red Paprika
  • 1/4 roughly chopped Onions
  • 1/2 or 1 small piece of garlic, thinly sliced
  • 1 Tsp Salt
  • Pepper
  • 1 Tbsp Olive Oil
  • Décor (basil leaves or parsley)
  • 2 Balls Egg Noodles



Gazpacho Sauce –

  1. Dice the tomatoes. Peel the cucumbers and dice into small pieces, with the red paprika. Slice the onion into thin slices with the garlic.
  2. Mix all vegetable ingredients with a food (juice) mixer, ideal to make the sauce into a dense (high concentrated) sauce.
  3. Add the salt, pepper, olive oil and the pesto sauce; keep refrigerated.


Combining –

  1. Boil the egg noodles as indicated in the bag and boil firmly. (about 90 seconds)
    6. Wash the egg noodles with cold water.  Décor with egg noodles in the middle, surrounding the noodles with gazpacho sauce, basil leaves or Italian parsley.



Gazpacho Pasta Recipe –

  • トマト(ざく切り)400g・・・・・・中2〜3個分
  • 胡瓜(皮を乱切り)・・・・・・・・1本
  • 赤パプリカ・・・・・・・・・・・1/2個
  • 玉ねぎ(粗みじん切り)・・・・・・1/4個
  • にんにく(薄切り) ・・・・・・・・5〜1かけ
  • バジルペースト・・・・・・・・・大匙1
  • 塩・・・・・・・・・・・・・・・小匙1
  • こしょう・・・・・・・・・・・・適量
  • オリーブオイル・・・・・・・・・大匙2
  • 卵麺(細)・・・・・・・・・2玉
  • 飾り(バジル、パセリ等あれば) ・・適宜
  1. トマトはざく切り。キュウリは皮を剥き乱切り。タマネギは粗いみじん切り。ニンニクは薄切りにしてフードミキサーで攪拌します。
  2. ジュースより濃度が高いソースが理想的。
  3. 調味料の塩、胡椒、オリーブオイル、バジルペーストをいれて攪拌。
  4. 冷蔵庫で冷やしておきます。
  5. 細いたまご麺を約90秒、かために茹でてお皿に盛りつける。麺の周りにガスパチョそースをたっぷりとかけ、飾りにバジルかイタリアンパセリで頂きます。
